Protein Pancakes


Breakfast is easily my favorite meal of the day. The problem is that some of the most delicious breakfast foods are packed with fat and added sugars. I'm always looking to see how I can improve the nutritional value of my favorite breakfast foods and these pancakes definitely did not disappoint!

I plugged the recipe into the MyFitnessPal app which gave me the following breakdown per serving:

341 calories 7.4g fat 44g carbohydrates 5.3g fiber 26.3g protein


Ingredients for one serving of around 5-7 pancakes (depending on size):

  • 1/2 cup whole grain oats

  • 1 egg

  • 4 oz plain Greek yogurt (my favorite is Fage 0% fat)

  • 1/2 banana

  • 1 tsp baking powder

  • 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon

  • Any toppings you'd like (I always top mine with some fresh fruit and a squeeze of honey)


Steps:

  1. Place all ingredients into blender or magic bullet and blend until smooth 

  2. Spray pan with nonstick spray and heat on medium heat

  3. Pour pancake batter into pan (about 1/4 cup for each pancake)

  4. When bubbles appear on the pancakes surface you're ready to flip!

  5. Transfer to plate and top with desired toppings

  6. Enjoy!
