Chicken Fajita



My favorite thing to eat is Mexican food. I could seriously eat it every day and not get sick of it! However, Mexican food can be full of fat and sodium, so I am always on the search for healthy alternatives.

 These are super simple and easy to make and don't require much time or effort! I made them as a single serving for myself, but you can always multiply the recipe for more servings. I substitute 0% fat Greek yogurt in place of sour cream, which reduces the fat and calories and increases the protein content.


One Serving:

Ingredients-

  • 1/2 boneless skinless chicken breast (this should be around 4-6 oz)

  • 1 eight-inch flour (or corn) tortilla

  • 2/3 cup frozen bell pepper and onion blend (I buy mine from Kroger but you can use fresh vegetables as well--just do 1/3 cup fresh bell pepper and 1/3 cup onion)

  • 1/4 cup Mexican style shredded cheese

  • 1/2 fresh lime or 1 tsp lime juice

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • 1/4 tsp garlic powder or garlic salt

  • 1 Tbsp Fage Total 0% Greek yogurt

  • 1 handful of fresh cilantro

Steps:

  1. Spray a skillet with nonstick spray and place on medium heat

  2. Slice the chicken breast into thin strips, about 1/4 inch thick and and 1 inch long

  3. Coat sliced chicken in the cumin, chili powder, and garlic powder (or garlic salt)

  4. Once pan is hot, place chicken in pan

  5. Cook for about 3-4 minutes before flipping the pieces

  6. Once flipped, cook the chicken about 4 more minutes or until completely cooked (cook time will differ based on how thick your chicken is cut)

  7. Meanwhile, spread cheese evenly on tortilla and heat in microwave for 15 seconds

  8. Once chicken is fully cooked, place it on the heated tortilla

  9. Place bell pepper and onion in the same pan used for the chicken and cook on medium heat until heated through (around 5-7 minutes)

  10. Place bell peppers and onions on tortilla on top of the chicken

  11. Squeeze lime juice over the chicken, peppers, and onions

  12. Top with fresh cilantro and Greek yogurt

  13. Enjoy!
