Greek Tomato and Cucumber Salad

There's nothing better than a plump tomato during summertime. I love the abundance of in-season produce that summertime provides and I try to incorporate them into my weekly recipes. This week I made a Mediterranean Chicken and Vegetable Bake and wanted a refreshing side dish to go along with it. I decided on this super simple salad and it was the perfect complement to the entree!

 


Ingredients:

  • 2 large Tomatoes

  • 2 English Cucumbers

  • 1/2 Red Onion

  • 2 Tbsp Olive Oil

  • 1 Tbsp Balsamic Vinegar

  • 1/2 Tsp Garlic Powder

  • 1/4 cup Crumbled Feta

  • Salt and pepper to taste


Instructions:

  1. Wash vegetables and chop tomato and cucumber into bite sized pieces

  2. Slice red onion into thin slices

  3. Mix vegetables with olive oil, balsamic vinegar, garlic powder, feta cheese, and salt and pepper in large bowl

  4. Refrigerate for at least 1 hour and enjoy!
